Il est \u00e9galement au service des entreprises et des particuliers n\u00e9cessitant une assistance technique\u00a0: informations, conseils, formulations de produits, formations, et essais sur machine pilote avec production d\u2019\u00e9chantillons commerciaux.<\/p>\n<p style=\"text-align: left\">Situ\u00e9 au PK 39.3 C\/Montagne, \u00e0 Papara le p\u00f4le dispose\u00a0:<\/p>\n<ul style=\"text-align: left\">\n<li>d\u2019une halle technologique \u00e9quip\u00e9e de nombreux mat\u00e9riels de transformation (broyage, cuisson, extraction, pasteurisation, st\u00e9rilisation)<\/li>\n<li>d\u2019un laboratoire o\u00f9 sont mis au point les formulations des produits avant test de fabrication \u00e0 l\u2019\u00e9chelle pilote.<\/li>\n<\/ul>\n<p style=\"text-align: left\">Parall\u00e8lement, dans le cadre de ses programme de recherche, le p\u00f4le d\u00e9veloppe de nouveaux produits (uru pr\u00e9-cuit surgel\u00e9 par ex) ou de nouveaux class=\"panel-body toggle-content fusion-clearfix\">\n<p>Le d\u00e9partement a initi\u00e9 en 2001 une \u00e9tude relative au brunissement interne de l\u2019<strong>ananas Queen Tahiti sur l\u2019\u00eele de Tahiti<\/strong>\u00a0dans le cadre d\u2019une \u00e9ventuelle exportation du fruit par fret maritime de\u00a0<strong>Polyn\u00e9sie fran\u00e7aise<\/strong>. Bien que le facteur g\u00e9n\u00e9tique pr\u00e9domine avec une sensibilit\u00e9 exacerb\u00e9e au brunissement interne des\u00a0<strong>ananas du groupe Queen<\/strong>, notre \u00e9tude a montr\u00e9 que le d\u00e9veloppement du d\u00e9sordre d\u00e9pendait aussi des caract\u00e9ristiques du fruit \u00e0 la r\u00e9colte, des pratiques culturales et des caract\u00e9ristiques du milieu naturel (temp\u00e9rature, insolation). Il est sans doute possible, malgr\u00e9 l\u2019importance du ph\u00e9nom\u00e8ne, d\u2019intervenir efficacement sur la fili\u00e8re par une s\u00e9lection rigoureuse des fruits export\u00e9s et une am\u00e9lioration des itin\u00e9raires techniques.<\/p>\n<p>Les r\u00e9sultats de nos travaux montrent qu\u2019il est sans doute possible d\u2019intervenir sur les fruits demi-jaunes (maturit\u00e9 apparente \u00e9gale \u00e0 2) par l\u2019interm\u00e9diaire d\u2019une augmentation de leur teneur initiale en acide ascorbique. La composition en potasse de la fumure min\u00e9rale appliqu\u00e9e avant la floraison apparaissant la cl\u00e9 de cette augmentation, Jus de Fruits de Mo\u2019orea, en partenariat avec le LEPA de \u2019Opunohu, a r\u00e9alis\u00e9 des essais de fertilisation. Les analyses r\u00e9alis\u00e9es au DIAA ont mis effectivement en \u00e9vidence l\u2019impact positif d\u2019une augmentation de l\u2019apport en potasse sur la diminution du BI apr\u00e8s r\u00e9frig\u00e9ration du fruit.<\/p>\n<div class=\"fusion-content-boxes content-boxes columns row fusion-columns-1 fusion-columns-total-1 fusion-content-boxes-1 content-boxes-icon-on-top 01\/IAA\/SDR du 12.01.06) ont permis d\u2019\u00e9tablir une s\u00e9rie de recommandations relatives \u00e0 l\u2019itin\u00e9raire post-r\u00e9colte optimal des fruits avec pour cons\u00e9quence le maintien de leur \u00e9tat de fra\u00eecheur sur une dur\u00e9e de 16 jours \u00e0 8\u00b0C. Compte tenu de la forte production du fruit cette ann\u00e9e, il a \u00e9t\u00e9 d\u00e9cid\u00e9 de reconduire ces essais avec comme objectif, d\u2019une part de valider les r\u00e9sultats de 2005 et les recommandations qui en ont d\u00e9coul\u00e9 et, d\u2019autre part, de tester de nouveaux conditionnements susceptibles d\u2019am\u00e9liorer encore la dur\u00e9e de vie postr\u00e9colte des fruits \u00e0 8\u00b0C.<\/p>\n<p style=\"text-align: left\">Les r\u00e9sultats de la conservation en frais obtenus en avril confirment qu\u2019il est possible d\u2019\u00e9tendre la commercialisation du ramboutan au-del\u00e0 de 15 jours par une strat\u00e9gie ad\u00e9quate de contr\u00f4le des processus de dessiccation affectant le fruit d\u00e8s sa r\u00e9colte. A 8\u00b0C, les fruits conditionn\u00e9s sous PE 40\u00b5m ont une dur\u00e9e de vie d\u2019environ 18 jours sans incidence majeure sur leur qualit\u00e9 gustative (rapport 168\/IAA.SDR du 03.12.07). La basse temp\u00e9rature de stockage associ\u00e9e \u00e0 l\u2019emballage protecteur permet une r\u00e9duction sensible des pertes de masse par \u00e9vaporation contribuant ainsi \u00e0 r\u00e9duire de fa\u00e7on efficace le fl\u00e9trissement et le noircissement du fruit. La cr\u00e9ation d\u2019une atmosph\u00e8re modifi\u00e9e enrichie en CO2 autour du fruit permet d\u2019autre part de limiter le brunissement physiologique du fruit entrepos\u00e9 \u00e0 basse temp\u00e9rature. L\u2019extension de la dur\u00e9e de vie postr\u00e9colte du ramboutan \u00e0 18 jours n\u2019a cependant \u00e9t\u00e9 rendue possible que par un strict respect des recommandations pr\u00e9c\u00e9demment \u00e9tablies, \u00e0 savoir :<\/p>\n<ul class=\"spip\" style=\"text-align: left\">\n<li>S\u00e9lection des fruits \u00e0 la r\u00e9colte en fonction de leur maturit\u00e9,<\/li>\n<li>Limitation du d\u00e9lai postr\u00e9colte avant la mise au froid \u00e0 2 ou 3 h maximum<\/li>\n<li>Pr\u00e9r\u00e9frig\u00e9ration des fruits entre 10 et 12\u00b0C.<\/li>\n<\/ul>\n<p style=\"text-align: left\">Le manque de ma\u00eetrise des itin\u00e9raires de r\u00e9colte et des op\u00e9rations postr\u00e9coltes du ramboutan en Polyn\u00e9sie reste cependant un frein s\u00e9rieux \u00e0 la r\u00e9gularit\u00e9 de l\u2019approvisionnement du march\u00e9 local. Ces essais ont \u00e9t\u00e9 r\u00e9alis\u00e9s en octobre \u00e0 partir des parcelles du DRA et sur 3 vari\u00e9t\u00e9s de carottes (Terracotta, Royal cross et New kuroda).<\/p>\n<p style=\"text-align: left\">Les r\u00e9sultats mettent en \u00e9vidence la n\u00e9cessit\u00e9 de ma\u00eetriser les pertes en eau affectant les carottes tout au long du stockage ; ces pertes \u00e9tant en effet responsables des d\u00e9gradations observ\u00e9es durant l\u2019entreposage des racines et plus particuli\u00e8rement de leur fl\u00e9trissement (rapport 97\/IAA\/SDR\/MAE du 6.07.2012). Les conditions de production et de conservation des 3 cultivars \u00e9tudi\u00e9s \u00e9tant rigoureusement identiques, le facteur vari\u00e9tal appara\u00eet comme la cl\u00e9 des diff\u00e9rences observ\u00e9es quant \u00e0 leur aptitude \u00e0 la conservation avec d\u2019un c\u00f4t\u00e9 d\u2019excellents r\u00e9sultats pour le cultivar Terracotta (6 mois entre 0 et 1\u00b0C) et de l\u2019autre une dur\u00e9e de conservation postr\u00e9colte limit\u00e9e pour les cultivars New Kuroda et Royal Cross (4 \u00e0 5 mois). Le statut physiologique des carottes \u00e0 la r\u00e9colte et selon le cultivar consid\u00e9r\u00e9 appara\u00eet comme la composante principale de leur aptitude \u00e0 la longue conservation.<\/p>\n<p style=\"text-align: left\"><u>Les recommandations suivantes ont pu \u00eatre \u00e9tablies<\/u> :<\/p>\n<ul class=\"spip\" style=\"text-align: left\">\n<li>Entreposage rapide des racines entre 0 et 1\u00b0C avec une HR voisine de 100% pour limiter les pertes en eau,<\/li>\n<li>\u00c9limination des fanes \u00e0 la r\u00e9colte pour limiter les processus de repousse au collet,<\/li>\n<li>\u00c9limination des racines de petit calibre (&lt; 40 mm) trop sensibles aux processus d\u2019\u00e9vapo-transpiration du fait de leur fort ratio surface\/volume,Retour ligne automatique<\/li>\n<li>R\u00e9colte des carottes \u00e0 pleine maturit\u00e9 pour limiter les stress postr\u00e9coltes qui impactent les qualit\u00e9s visuelles et gustatives des racines durant leur entreposage r\u00e9frig\u00e9r\u00e9.<\/li>\n<\/ul>\n<p style=\"text-align: left\">Ce dernier point appara\u00eet comme le plus d\u00e9licat et demande pour chaque cultivar une ma\u00eetrise parfaite des conditions de production. Cependant, le caract\u00e8re saisonnier de cette production, qui s\u2019\u00e9tale de f\u00e9vrier \u00e0 septembre, pose le probl\u00e8me de l\u2019approvisionnement des march\u00e9s locaux en limes entre octobre et janvier. Le <strong>citron des Marquises<\/strong>, \u00e0 production plus \u00e9tal\u00e9e, compense en partie durant la saison creuse la p\u00e9nurie en limes des \u00celes du Vent mais pr\u00e9sente tr\u00e8s souvent des signes de s\u00e9nescence avanc\u00e9e en relation avec des itin\u00e9raires techniques postr\u00e9coltes d\u00e9ficients (rapport 43\/IAA.DR du 19.01.01). Dans tous les cas, la p\u00e9nurie en limes s\u2019accompagne d\u2019une hausse des prix \u00e0 la vente de plus de 50% sur le march\u00e9 local .<\/p>\n<p style=\"text-align: left\">Les essais de conservation de limes mexicaines (<em><strong>Citrus aurantifolia<\/strong><\/em>) men\u00e9s au DIAA depuis 1999 visent la r\u00e9gulation des flux de citrons commercialis\u00e9s sur le march\u00e9 local. En effet, dans le contexte d\u2019un volume de production suffisant, la conservation \u00e0 l\u2019\u00e9tat frais de la lime permettrait, d\u2019une part, l\u2019\u00e9coulement des surproductions saisonni\u00e8res pour les producteurs et, d\u2019autre part, une plus large disponibilit\u00e9 de ces fruits pour le consommateur. Ce cadre bien d\u00e9fini est la base essentielle des exp\u00e9rimentations men\u00e9es car il sous-entend l\u2019optimisation des conditions de stockage dans le but d\u2019obtenir une dur\u00e9e de conservation la plus longue possible (au moins 3 mois).<\/p>\n<p style=\"text-align: left\">Sont pr\u00e9sent\u00e9s ci-joint, une synth\u00e8se des r\u00e9sultats obtenus jusqu\u2019en 2002 et posant les bases et les recommandations pour une conservation r\u00e9frig\u00e9r\u00e9e longue dur\u00e9e r\u00e9ussie du <strong>t\u0101poro Tahiti<\/strong> ainsi que les r\u00e9sultats des derniers essais r\u00e9alis\u00e9s en 2011 confirmant l\u2019importance de maintenir une hygrom\u00e9trie \u00e9lev\u00e9e dans l\u2019atmosph\u00e8re de stockage lorsque l\u2019entreposage longue dur\u00e9e de la lime mexicaine (3 mois) est envisag\u00e9. Le contr\u00f4le des processus d\u2019\u00e9vapotranspiration des fruits durant l\u2019entreposage permet en effet de conserver le fruit dans de bonnes conditions 3 mois entre 8 et 10\u00b0C et ce, m\u00eame en consid\u00e9rant ensuite une commercialisation d\u2019une semaine en conditions ambiantes.<\/p>\n<p style=\"text-align: left\">Dans ce contexte, le traitement d\u2019enduction postr\u00e9colte des fruits par une \u00e9mulsion cireuse semble indispensable. Il permet dans le cadre d\u2019une longue conservation (&gt; 3 mois) suivie d\u2019une commercialisation en conditions ambiantes de maintenir l\u2019aspect g\u00e9n\u00e9ral des fruits et de les maintenir dans un \u00e9tat de fra\u00eecheur proche de celui du fruit frais. Dans ce cadre, la cire Decco Lustr 202, \u00e0 base de paraffine et de poly\u00e9thyl\u00e8ne, peut \u00eatre recommand\u00e9e pour sa capacit\u00e9 \u00e0 r\u00e9duire efficacement les pertes de poids postr\u00e9coltes et donc tous les processus de fl\u00e9trissement pouvant alt\u00e9rer les fruits.
